Junmai Ginjo Sake, which is made by polishing Dewa Sake to 60%, brewing it with Yamagata yeast, storing the sake
squeezed in early spring at ice temperature, and shipping it as unfiltered raw sake. A refreshing ginjo fragrance and a
delicate, moderately tasty fresh acid bring the whole together. The balance between the depth of taste of rice and the
sharpness is exquisite.
